Strawberry-Orange Tropical Salad
Our daughter-in-law Linda brought this delicious salad to our son Chris’ birthday bash held at our daughter Brandi’s this year. Jan like it so much she asked for the recipe. Turns out to be from an old Krogers ad.
Quick and Easy, and really Good.
Serves 4
Ingredients:
1/2 cup Strawberry Yogurt
2 Tbsp Olive Oil
1-1/2 tbsp White Balsamic Vinegar
5 cups Spring Mix Salad Greens
1/2 cup Shredded Coconut (optional)
1/2 cup Fresh Strawberries, thinly sliced
1/2 cup Mandarin Orange slices
1/2 cup Chopped Walnuts or Pecans
Directions:
Whisk the yogurt, olive oil, and vinegar in a bowl until blended.
Toss the greens, coconut, strawberries, and mandarin oranges in a bowl.
Add the dressing and mix to coat.
Garnish with nuts and serve.
Refrigerate any leftovers.
